One&Only’s highly anticipated Aesthesis welcomed its first guests on November 11, 2023, ushering in the luxury hotel group’s first property in Greece. Next door, Villa Nostos is inspired by the hotel’s design, with a central swimming pool, outdoor lounges and dining rooms with fireplaces, and locally-influenced gardens, creating a protected sanctuary just steps from the sea .

A rich culinary journey awaits guests at One&Only Aesthesis, as the resort accompanies the rebirth of Glyfada —one of Greece’s most cosmopolitan gastronomic destinations. Teh resort’s Manko Restaurant, located directly on Glyfada Beach, offers a captivating taste experience day and night. With its private pool and three lively bars, guests can enjoy Peruvian-inspired cuisine.
To develop the menus for each restaurant, executive chef Frédéric Le Gac collaborated with the famous Greek-Italian chef Ettore Botrini (1 Michelin star). He thus brings his enigmatic Mediterranean cuisine to Ora by Ettore Botrini. Two-time Michelin-starred Spanish chef Paco Morales offers an exclusive culinary experience at El Bar de Paco Morales, where he reimagines Andalusian cuisine with Mediterranean flavors in a setting that is both casual and lively.
Bar Alelia pays homage to the country’s rich olive tradition and serves cocktails crafted by knowledgeable mixologists; infused with olives, herbs and citrus, highlighting Greece’s culinary heritage and local ingredients. Overlooking the resort’s central swimming pool, Minima offers all-day drinks and light fare. At dusk, guests will admire the sunset in Thimisi. Offering craft cocktails and fine wines, this sophisticated bar provides the perfect setting for casual evenings or gatherings with friends.

Combining culture, nature and ancient history on the mythical Athenian Riviera, One&Only Aesthesis has designed experiences to captivate the senses. These adventures include a guided tour of the Acropolis and its UNESCO sites, as well as local workshops in Athens, including Greek sandal making with local artisans and visiting the “conservation of ‘rare works of art and jewelry’ at the Benaki Museum.
